The funniest thing when talking about a pine nut recipe was that he in the end wanted to prove to me that they wouldn't improve his digestion. Well one week later I handed him 12 pounds and he ate them all that following week. It turns out that he tossed them in all the pine nut recipes he could find and to his surprised he loved every meal, even the burnt ones and he also lost 5 pounds. Hmmm..wierd, but makes sense.

Capers Pasta with Olives and Pine Nuts Recipe

This simple pasta dish is rich with the flavor of capers, black olives, garlic, and pine nuts. This is a fast and easy meal to make or use it as a side dish.


Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Yield: 6 portions

Ingredients:

  • 3.5 Tablespoons butter
  • 3 fluid ounces olive oil
  • 3 cloves garlic, minced
  • 3 ounces pine nuts
  • 15 ounces California black olives, sliced
  • 3 Tablespoons capers, rinsed, minced
  • 1.5 Tablespoon basil, cut into chiffonade
  • 3/4 teaspoon oregano, minced
  • 3/4 teaspoon flat parsley, minced
  • 1 pound pasta, any shape
  • Salt, to taste
  • Black pepper, ground, to taste
  • 2 ounces Parmesan cheese, grated

Preparation:

Combine the butter with the olive oil and heat over medium heat in a large saute pan. Add the garlic and pine nuts, reduce the heat to low, and continue to cook until the nuts are just beginning to turn golden in color. Add the olives, capers, basil, oregano, parsley, salt, and pepper. Toss until the products are incorporated and heated thoroughly.

Cook the pasta in a large saucepot of boiling salted water until al dente. Drain well. Toss the drained pasta with the nut-olive mixture over medium heat until the products are incorporated and heated thoroughly. Season to taste with salt and black pepper.

Sprinkle each portion with grated Parmesan cheese.


Sun-Dried Tomato Pasta with Pine Nut  Recipe

Pasta is stir-fried with the rich flavors of pine nuts, sun-dried tomatoes, herbs, and your favorite cheese for a quick meal. You can have this easy pasta dish on the table in less than 30 minutes. Good as an entree with a salad and bread or use as a side dish. Be sure the pasta is well-drained. The oil will spit and pop when it contacts water.


Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Yield: 4 servings

Ingredients:

  • 12 ounces pasta (fusilli or rigatoni) cooked al dente and drained well
  • 4 Tablespoons olive oil, divided use
  • 1 cup toasted pine nuts
  • 1 cup oil-packed sun-dried tomatoes, drained and chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper

Preparation:

Heat a large, heavy skillet over medium-high heat. Add 3 tablespoons of the olive oil and swirl to coat the pan. Add the well-drained pasta and stir-fry until pasta begins to brown at the edges. Remove to a large bowl.

To the skillet, add the remaining 2 tablespoons of olive oil. Stir-fry the pine nuts and sun-dried tomatoes for 1 minute. Add to the pasta along with the parsley, basil, and Parmesan cheese. Sprinkle with kosher salt and freshly ground black pepper. Toss to combine and serve immediately.
